Smoked Pork Tenderloin Crusted in Honey & Herbs

Ingredients

1 Schwab smoked boneless pork tenderloin (6 lbs)
3 Tablespoons Grainy Dijon Mustard
2 Tablespoons of Butter (melted)
1 Tablespoon of Honey
1/4th Cup of Fresh Chopped Dill
3 Green Onions (chopped)
1 Tablespoon Lemon Zest
12 Butter Crackers (crushed)

Smoked Pork Tenderloin Cooking Directions

Preheat the oven to 425°
In a medium bowl, whisk together the mustard, honey, & butter
In another bowl, combine the dill, green onions, and lemon zest
Rub the mustard mixture on the pork loin. Turn the pork loin to coat all sides for consistent flavor
Rub ½ of the herb mixture on the pork loin. Again, turning the pork lion to coat all sides and pressing on the herbs to adhere to the pork
Place the herb pork tenderloin in a small roasting plan and roast for 10 minutes
Reduce the oven temperature to 275° and let the crusted pork tenderloin cook for 40-50 minutes or until internal temperature reaches 145°
Remove the herb crusted pork roast from the oven and let it stand for 10 minutes
Sprinkle remaining herb mixture over the top of your herb crusted pork loin
Enjoy with fresh vegetables
