Each ham is hand-selected and hand-trimmed to ensure that they standup to Schwab's standard of delicious excellence. Once trimmed, the ham is then cured and smoked over real hardwood hickory for 10 - 12 hours, giving it an indulgently smoky and sweet flavor that's become an Oklahoma legend.
